I recently bought some medium-sized red beets from the farmer’s market and was ready to try preparing them. I admit I haven’t cooked beets often and I was feeling a bit intimidated, but i found a recipe that sounded worth trying

This salad can be an entire meal if you add in a protein, such as pan-sautéed tofu (as shown in the picture), chicken, salmon or beef. I also serve it as a side salad…as usual, there are many options. Enjoy!
