I am always looking for new ways to satisfy my “sweet” tooth and recently stumbled upon this delightfully simple, satisfying and DELICIOUS dessert. These truffles are raw, vegetarian, and pure yum!!! If you wanted to make these vegan, you could switch the honey with pure maple syrup. The coconut oil and shredded coconut provide me with sustainable energy and the chia seeds provide a great source of omega-3 fatty acids and fiber. The cashews give me protein and the honey is just the right amount of sweetness…I’m set!
